Ingredients

  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 3/4 cup white sugar
  • 2 large eggs
  • 2 t. maple extract
  • 2 1/2 cups quick-cooking oats
  • 1 1/2 cups all-purpose flour
  • 1 t. baking soda
  • 1/2 t. salt
  • 1 1/2 t. ground cinnamon

Instructions

  1. Preheat oven to 350 degrees. In a large bowl, cream butter and sugars for 2 minutes, until light and fluffy. Beat in the eggs and maple extract.
  2. In a separate bowl, mix the oats, flour, baking soda, salt, and cinnamon.
  3. Add this to the creamed mixture and mix just until combined.
  4. Chill the dough for 30 minutes so it doesn’t spread too much when baking.
  5. Drop dough by rounded tablespoonfuls 2 inches apart onto baking sheets lined with parchment paper. Bake for 10-12 minutes or until golden brown.
  6. Cool on the pan for a couple minutes before moving cookies to cooling racks.
